Chocolate Chip Cookie Brownies


When Justin and I lived in Philly, there were these brownies by BT Baking that were pretty much the greatest idea ever.  They were Chocolate Chip Cookie Brownies.  What could be better than that?  Chocolate Chip Cookies and Brownies are pretty much the two ultimate comfort foods and combining them is simply bliss.  I always keep some chocolate chip cookies frozen in individual balls in the freezer for cookie emergencies, which is the easiest way to make the cookie brownies.  If you don't have chocolate chip cookies on hand, you'll have to make a small batch of chocolate chip cookies as well as a batch of brownies.  And what makes these special is they're completely gluten free!!  They combine crispy, chewy chocolate chip cookies with soft, rich, decadent brownies.  They're the ultimate indulgence!

Chocolate Chip Cookie Brownies
- 16 1 oz chocolate chip cookie dough balls from Jesicakes' original Gluten Free Chocolate Chip Cookie Recipe
- 1 full recipe of Gluten Free Blissful Brownies


So once you have you chocolate chip cookie dough made, you want 16 approximately 1 ounce balls of dough.  You want to flatten them to about a 2" diameter about 1/2" or so thick.  
Place the dough balls on a tray and store them in the freezer until you need them later on.  Because of the extra dough on top of the brownies, these bake for a while.  So adding the cookies frozen will prevent them from getting overcooked.

Make the brownies just as my old post says to.  Line the bottom of an 8"X8" pan with parchment and grease the sides.  Preheat the oven to 350˚F.  Pour the brownies batter into the pan.  Bake the brownies for 5-6 minutes.
Remove the brownies from the oven temporarily.  Take the cookie dough from the freezer and place it on top of the brownies. Put the brownies back in the oven, rotating half way through.  The full baking time after adding the cookies will be about 35-40 minutes.
Bake until a toothpick comes out mostly clean (some crumbs are okay).
When pan is cool to the touch, flip the brownies out of the pan.
Cut into desired size, enjoy, and indulge!  Try not to eat them all yourself!
